Place Parmesan cheese into mixing bowl and grate 10 sec/speed 10. Transfer to a bowl and set aside.

Place lemon peels into mixing bowl and grate 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.

Add onion, garlic, olive oil and 1 oz butter, place splash guard on top of mixing bowl lid and sauté High Temp. . Remove splash guard, insert measuring cup and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.

Add rice and without measuring cup sauté 3 min/250°F//speed 1.

Add wine and without measuring cup cook 1 min/212°F//speed 1.

Add 25 oz water, stock cube and salt. Scrape bottom of mixing bowl thoroughly with spatula to loosen rice. Place simmering basket instead of measuring cup onto mixing bowl lid and cook 13-15 min/212°F//speed 1. Allow risotto to rest in mixing bowl for 1 minute, then transfer into a serving bowl.

Place 35 oz water and 1 drop dish soap into mixing bowl and start Pre-clean /All purpose. Meanwhile, using spatula, combine risotto with 0.5 oz butter and reserved Parmesan cheese. Garnish with lemon zest and mint and serve immediately.
